Gina, thank you for joining us! Can you introduce yourself and your fantastic company for our readers?

Hi! My name is Gina and I am the founder and master brewer at Wild Fizz Kombucha! I am also the mother of an almost 1 year old called Oona who spends most of her time with me in the brewery. I run the business with my partner and baby daddy Luke, and we live on a boat in Twickenham… so when we’re not working we spend our days floating around the Thames on our barge.

That sounds pretty blissful! Tell us a little bit about Kombucha - what is it, why's it so good for us?

Kombucha is a fermented, live product made from tea, sugar & live cultures. The cultures consist of various wild (friendly) strains of Bacteria, Yeasts and Acids and they are the magic ingredients.

In terms of hard facts there are no large scale studies that prove that Kombucha can cure cancer or keep you young and beautiful….There is, however, a growing amount of scientific - as well as testimonial - evidence that seems to show drinking Kombucha makes people feel better and can resolve certain ailments.

What I can tell you is that it resolved my IBS (Irritable Bowel Syndrome) when nothing else could, and is still keeping me off the loo! I also get emails every week from people who feel like their overall health has improved by drinking booch, which is gospel to me!

I like to use an analogy when asked why I think it works: drinking Kombucha is like drinking a rainforest. You are adding a wide variety of wild organisms into your system, who can help diversify and re-wild your gut. In nature a diverse biosphere has a stronger ability to fight threats, deal with environmental pressures and survive in lean times, so why wouldn't your insides be the same?

I drink loads every day, but you don't have to. You do need to have some fermented live foods daily though, so if you incorporate Kombucha into your lifestyle alongside Kimchi, Sauerkraut & Kefir you're doing great!

That is a very good analogy - we like that! So, Booch: good for you, and helped you ease your IBS symptoms! So how did Wild Fizz Kombucha begin?

So I discovered Kombucha on a trip to the U.S a few years ago. I loved its tart, sweet taste and delicious goodness. After a few days hooked on the ‘booch, I noticed that my IBS symptoms had pretty much disappeared. Having struggled with IBS since my early 20’s, I had tried everything I could to manage my condition with little success, but this was a major game changer. In fact, that trip changed the course of my life…as I sat in the Arizona Desert I started thinking…can I start a Kombucha company? And here I am today, brewing booch in Tottenham!

Where did your business name come from?

We played around with a lot of different names but Wild Fizz just kind of came to me. It fit perfectly because Kombucha is literally a wild and fizzy drink! It feels friendly, approachable and natural.

When you first began Wild Fizz, did people understand what Kombucha was or how it would help them? What was the response like?

Uhm, hilarious! I guess it's a bit like marmite, some people love it and some people will grow to love it. It needs a lot of explaining because our culture of eating and drinking is so far removed from nature that we get scared of words like ‘alive’, or ‘cultured’ or ‘fermented’. It sounds like it's bad for you, or like it's medicine. But things are changing, and more and more people are coming round to the idea of live foods and health as something exciting and fun and delicious.

What's the most exciting part of your work at Wild Fizz?

Making new flavours, developing the brand and meeting people and showing them how to make Kombucha!

What's been the hardest part of your journey so far?

The work/life balance. Last year, mid scaling up and growing as a business, we had a baby. 2018 was the hardest year of my life, but also the best year in many ways. 2019 here I come!
